2021 Lush Sparkling Rosé is a continuation of the Two Sisters dedication to the creation of extraordinary sparkling wine. The 2021 vintage brought abundant sunshine and hot temperatures for exceptional flavour development in the fruit. Made using the Traditional Method, Lush is crafted using 68% Chardonnay and 32% Pinot Noir, then finished with a very small addition of Cabernet Franc at the dosage stage.

The inviting colour is a reflection of this late addition of the Cabernet Franc, which is fully finished red wine. Lovely pronounced mousse and tiny, yet evident bubbles in the glass. The nose is bursting with notes of green apple, vibrant citrus and citrus zest, blanched almonds and subtle hints of red currant and cranberry. The palate has a wonderful acid grip, accentuating the core of fruit. Lush is textured and lingering, as the layers of white and red fruit are complemented by the emerging brioche character of the wine. A delicious celebration of taste on its own, yet incredibly versatile with food as well; enjoy with shellfish, hors d’oeuvres, grazing platters, quiche, and grilled salmon.
