This 2020 Cabernet Sauvignon was sourced exclusively from the Two Sisters Estate vineyard, located within the unique Niagara River sub-appellation. Yields are carefully managed to ensure exceptional flavour development and concentration. The perfect fall provided ideal conditions for the late ripening Cabernet Sauvignon to gain ripeness and flavour. The fruit was hand harvested after extended time on the vine to optimize ripeness and flavour, then fermented slowly in gentle contact with the skins. It was carefully aged for 36 months in Oak barriques, 100% French.
This Cabernet Sauvignon is full and rich, displaying an inviting nose of wild strawberry, blackberries and black currants. True to the varietal, there is a perfectly complementing earthiness reminiscent of a cigar box. On the palate the dark fruit notes are accentuated by beautifully integrated structure, along with hints of sweet tobacco leaf, cedar and smoke. Delightfully complex and balanced now, this Cabernet Sauvignon delivers a promise of years of age worthiness.
